Four years ago, I was diagnosed with life threatening allergies to dairy. It was a devastating diagnosis. You would not believe how many items contain dairy, that’s all milk, cheeses, ice cream, wines (casein), most restaurants, but the biggest loss was chocolate. The idea of never being able to eat a chocolate bar again was a horrible feeling. After about 6 months of whining (and still occasionally when I see cheese pizza), I decided to take action.
First, I googled all the dairy free chocolate’s and there are a few. Then I started thinking, I can make chocolate it can’t be that hard and that’s when I discovered Ecole’, an online chocolatier school and was beyond thrilled! It was a 6 week online class. At first I was very skeptical, how could I possibly learn how to make delicious chocolates, chocolate bars and goodies online? You can’t teach that stuff. I needed a hands-on class but with dairy allergies, being exposed to the allergen meant serious consequences. So I took a risk and signed up for the class. And it was awesome!
Now, I make the best home made chocolates, caramels and Texas dipped bacon and it’s all dairy free. The best thing about it was not only did I learn something new, I discovered a passion that I had no idea I had! And I love giving allergy free treats to people, especially kids that cannot eat them.
